CHOCOLATE WALNUT COOKIES
2 pkgs (8 squares) semisweet baking chocolate, divided
3 / 4 cup firmly packed brown sugar
1 / 4 cup butter, slightly soft
2 eggs
1 teaspoon vanilla
1 / 2 cupFlour
Baking powder 1 / 4 tsp
2 cups chopped walnuts
Preheat oven to 350 degrees.
Coarsely chop 8 squares of chocolate and set aside. Microwave remaining 8 chocolate squares in a microwavable bowl very high for 2 minutes, stirring after 1 minute. Stir until chocolate is completely melted. Add the brown sugar, butter, eggs and vanilla. Stir the mixture with a wooden spoon until well mixed. Mix the flour and baking powder and mix well. Stir inchocolate and chopped nuts. Drop by rounded tablespoons of dough on such sheets of baking paper.
Bake at 350 degrees for 12 to 13 minutes or until puffed and shiny. Cool for a minute before leaving the pan to cool completely on a wire rack.
Yield: 30 cookies
Whole Wheat Chocolate Chip Cookies YUMMY
3 / 4 cup brown sugar
3 / 4 cup sugar
1 cup butter, softened
1 teaspoon vanilla extract
1 egg
2 cups whole wheat flourFlour
1 teaspoon baking powder
1 / 2 teaspoon salt
1 package (12 ounces) chocolate chip cookies
1 cup chopped pecans, optional
Preheat oven to 375 degrees.
In a large bowl, whisk together brown sugar, granulated sugar, butter, vanilla and egg until well blended. Mix the flour, baking powder and salt. This creates a firm dough! Stir in chocolate chips and pecans, if using. Drop by rounded tablespoons apart, about 2 inches, on ungreased cookieSheet.
Bake at 375 degrees 80-10 minutes or until light brown, with the centers are still soft. Allow to cool a little 'before removing from pan. Cool completely on rack.
Yield: about 3 dozen cookies.
Note: If you want to help the cookies, use 1 1 / 2 cups whole wheat flour and 1 / 2 cup of flour.
IRRESISTIBLE peanut butter cookies
1 / 4 cup butter
1 / 4 cup vegetable oil *
3 / 4 cup peanut butter (cream works best)
1Cups of 1 / 4 firmly packed brown sugar
3 tablespoons milk or cream
1 tablespoon vanilla extract
1 large egg
1 1 / 4 cup flour
1 / 2 cup whole wheat flour **
Baking powder 3 / 4 tsp
1 / 2 teaspoon salt
Preheat oven to 375 degrees.
Spray baking sheet with nonstick cooking spray to do, set aside.
In a bowl, combine the butter, lard, peanut butter, brown sugar, milk or cream and vanilla. Beat at medium speed until well blended, add egg. Beat untilSmooth Combine flour, baking powder and salt, add the cream mixture at low speed.
Drop by rounded spoonfuls about two inches apart on prepared baking sheets. Flatten slightly with a fork. Begins to turn brown bake at 375 degrees for 7-8 minutes or until set and just beginning. Let set for several minutes before cooling completely on the baking sheet on a wire rack cool.
Yield: about 3 dozen.
* No added sugar substitutesApple juice for a healthier cookie.
** The whole wheat flour makes a healthier cookie. But you can use all purpose instead.
